Summer Simple Tacos
INGREDIENTS
- 4 corn tortillas and/or romaine hearts
- 1 15 oz can of red or black beans
- 1 cup fresh or frozen corn
- 1 cup of salsa
- ½ of peeled, cored and sliced avocado
- 2 green onions (white and green parts), thinly sliced
- 1 red pepper seeded and sliced
- 1 tablespoon finely chopped fresh cilantro (optional)
- Juice of 1 lime
INSTRUCTIONS
- Combine beans, corn, peppers, salsa, avocado, green onions, cilantro, lime juice in a bowl.
- Spoon the mixture into tortillas or/and romaine lettuce hearts.
- Serve immediately. The leftover bean mixture can be stored in the fridge for 12 hours.
Watermelon Dessert
Ingredients
- Watermelon flesh cut in cubes
- Juice and zest of a lime
- 1 cup of fresh mint leaves
- 1-2 tablespoons of date syrup (optional)
Instructions:
- Assemble watermelon in a glass bowl, drizzle lime juice and date syrup, add fresh mint leaves. Enjoy it as a snack or dessert.
- Make a sorbet by freezing watermelon chunks for 3 hours or overnight. Then mix in a food processor with lime juice and date syrup. Serve immediately topped with mint leaves.
