Summer Simple Tacos

INGREDIENTS

  • 4 corn tortillas and/or romaine hearts
  • 1 15 oz can of red or black beans
  • 1 cup fresh or frozen corn
  • 1 cup of salsa
  • ½ of peeled, cored and sliced avocado
  • 2 green onions (white and green parts), thinly sliced
  • 1 red pepper seeded and sliced
  • 1 tablespoon finely chopped fresh cilantro (optional)
  • Juice of 1 lime

 

INSTRUCTIONS

  1. Combine beans, corn, peppers, salsa, avocado, green onions, cilantro, lime juice in a bowl.
  2. Spoon the mixture into tortillas or/and romaine lettuce hearts.
  3. Serve immediately. The leftover bean mixture can be stored in the fridge for 12 hours.

Watermelon Dessert

Ingredients

  • Watermelon flesh cut in cubes
  • Juice and zest of a lime
  • 1 cup of fresh mint leaves
  • 1-2 tablespoons of date syrup (optional)

Instructions:

  1. Assemble watermelon in a glass bowl, drizzle lime juice and date syrup, add fresh mint leaves. Enjoy it as a snack or dessert.
  2. Make a sorbet by freezing watermelon chunks for 3 hours or overnight. Then mix in a food processor with lime juice and date syrup. Serve immediately topped with mint leaves.
